Here are some step-by-step pictures of a repair we did recently. There was water damage but when we left it looked as good as new.

We were faced with this water damaged ceiling and wall.

First we removed the damaged sheetrock.

The next step was to install the new sheetrock

Once the sheetrock was in we taped and mudded the area.

The last step was to match the texture of the existing finish.
